Slow Cooker Beef Tips and Rice

This is the kind of meal that has everybody coming back for seconds. Tender beef tips cooking low and slow in a rich brown gravy, served over fluffy white rice — it's comfort on a plate and takes hardly any work from you.

Ingredients

  • 2½ to 3 lbs beef stew meat or sirloin tips, cut into bite-sized pieces
  • 2 tbsp vegetable oil
  • 1 large onion, chopped
  • 8 oz mushrooms, sliced (optional, but good)
  • 3 cloves garlic, minced
  • 1 can (10.5 oz) cream of mushroom soup
  • 1 can (10.5 oz) beef broth
  • 2 tbsp Worcestershire sauce
  • 1 tbsp soy sauce
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 tsp black pepper
  • ½ tsp salt
  • 1 bay leaf
  • 3 cups long-grain white rice, cooked according to package directions
  • Fresh parsley for garnish (optional)

Instructions

    Heat the vegetable oil in a large skillet over medium-high heat. Working in batches so you don't crowd the pan, brown the beef tips on all sides, about 2 to 3 minutes per batch. Transfer the browned meat to your slow cooker.

    Add the chopped onion, mushrooms (if using), and minced garlic to the slow cooker with the beef.

    In a medium bowl, whisk together the cream of mushroom soup, beef broth, Worcestershire sauce, soy sauce, onion powder, garlic powder, black pepper, and salt until smooth. Pour this mixture over the beef and vegetables in the slow cooker.

    Tuck the bay leaf down into the liquid, put the lid on, and cook on low for 6 to 8 hours or on high for 4 to 5 hours, until the beef is fork-tender and the gravy is thick and rich.

    About 30 minutes before serving, start cooking your rice so it's hot and fresh. Remove the bay leaf from the slow cooker and discard it.

    Serve the beef tips and gravy generously over the cooked rice, and sprinkle with fresh parsley if you like.

Pro Tips

  • Browning the meat first adds so much flavor — don't skip that step even though it's a slow cooker meal.
  • If your gravy seems too thin at the end, mix 2 tablespoons of cornstarch with 2 tablespoons of cold water, stir it into the slow cooker, and let it cook on high for 15 more minutes to thicken up nice.
