Smothered Pork Chops with Onion Gravy
Now this right here is Sunday dinner at its finest. These pork chops get seasoned up good, browned till they're golden, then smothered down in a rich onion gravy that'll have everybody at the table reaching for seconds. It's the kind of dish that makes your house smell like love.

- 6 bone-in pork chops (about 1 inch thick)
- 2 tsp salt
- 1 tsp black pepper
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp paprika
- 1 cup all-purpose flour
- 1/4 cup vegetable oil
- 2 large yellow onions, sliced thin
- 3 cups chicken broth
- 2 tbsp butter
- 1/4 cup all-purpose flour (for the gravy)
- 1/2 tsp dried thyme

Season both sides of the pork chops real good with the salt, pepper, garlic powder, onion powder, and paprika. Let them sit for about 10 minutes while you get your flour ready in a shallow dish.

Dredge each pork chop in the flour, shaking off any extra, and set them aside on a plate.

Heat the oil in a large, deep skillet or Dutch oven over medium-high heat. Brown the pork chops on both sides, about 3 to 4 minutes per side, till they're nice and golden. Don't crowd the pan - work in batches if you need to. Take them out and set aside.

Turn the heat down to medium and add the butter to that same skillet with all those good drippings. Throw in your sliced onions and cook them down till they're soft and starting to brown, about 8 to 10 minutes. Stir them around so they don't stick.

Sprinkle the 1/4 cup flour over the onions and stir it in real good. Let it cook for about a minute till it smells a little nutty.

Slowly pour in the chicken broth, stirring the whole time to keep it smooth and get up all those brown bits from the bottom of the pan. Add the thyme and bring it to a simmer.

Nestle those pork chops right back into the gravy, spooning some of that onion gravy over top. Cover the skillet, turn the heat to low, and let everything simmer together for 25 to 30 minutes till the pork chops are tender and cooked through.

Taste that gravy and add more salt and pepper if it needs it. Serve these chops hot with plenty of that onion gravy spooned over the top.
Pro Tips
- ★Don't skip the browning step - that's where all the flavor comes from in that gravy.
- ★If your gravy gets too thick while it's simmering, just add a splash more broth. If it's too thin, let it simmer uncovered for a few extra minutes.
