Sauteed Spinach with Garlic

This is the kind of greens that come together quick when you need something green on the table fast. The garlic makes that spinach sing, and it wilts down so tender and sweet you'll wonder where it all went. Perfect alongside just about anything you're serving for Sunday dinner.

Ingredients

  • 2 lbs fresh spinach, washed and stems removed
  • 3 tbsp olive oil or vegetable oil
  • 4 to 5 cloves garlic, minced
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/4 tsp red pepper flakes (optional)
  • 1 tbsp butter
  • 2 tsp fresh lemon juice (optional)

Instructions

    Wash your spinach real good in cold water, drain it well, and remove any thick stems that look tough.

    Heat the oil in your biggest skillet over medium-high heat until it's nice and hot.

    Add that minced garlic and stir it around for about 30 seconds until you can smell it good, but don't let it burn.

    Start adding the spinach by the handful, stirring as you go so it all gets coated with that garlic oil—it'll seem like a mountain at first but it cooks down quick.

    Sprinkle in your salt, black pepper, and red pepper flakes if you're using them, and keep stirring for about 5 to 6 minutes until all the spinach is wilted down and tender.

    Take it off the heat, stir in that butter until it melts, and squeeze a little lemon juice over top if you want some brightness.

    Serve it hot right away while it's at its best.

Pro Tips

  • Don't crowd the pan—if your skillet's not big enough, cook the spinach in two batches so it sautés instead of steams.
  • Fresh spinach holds a lot of water, so let it drain real good after washing or your dish will be watery instead of tender and silky.
