Salisbury Steak with Mushroom Gravy

This is comfort food at its finest — tender beef patties smothered in rich, savory mushroom gravy that'll have everybody at the table asking for seconds. It's like a fancy hamburger steak that grew up and put on its Sunday best. Serve it over mashed potatoes or rice and watch how fast those plates get cleaned.

Ingredients

  • 2 lbs ground beef (80/20 works best)
  • 1/2 cup plain breadcrumbs
  • 1 large egg, beaten
  • 1/4 cup milk
  • 2 tsp Worcestershire sauce
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp vegetable oil
  • 1 medium onion, sliced thin
  • 8 oz mushrooms, sliced (white or baby bella)
  • 3 tbsp all-purpose flour
  • 2 cups beef broth
  • 1 tbsp ketchup
  • 1 tsp Worcestershire sauce (for the gravy)

Instructions

    In a large bowl, mix together the ground beef, breadcrumbs, egg, milk, 2 teaspoons Worcestershire sauce, garlic powder, onion powder, salt, and pepper until just combined — don't overwork it or your patties will be tough.

    Shape the mixture into 6 oval patties, about 3/4 inch thick, making them look like little steaks.

    Heat the oil in a large skillet over medium-high heat and brown the patties on both sides, about 3 to 4 minutes per side — they don't need to be cooked through yet, just nicely browned. Remove them to a plate.

    In the same skillet with all those good drippings, add the sliced onion and mushrooms and cook until they're soft and golden, about 5 to 6 minutes.

    Sprinkle the flour over the mushrooms and onions, stir it around for about a minute to cook out the raw flour taste.

    Slowly pour in the beef broth while stirring to avoid lumps, then add the ketchup and 1 teaspoon Worcestershire sauce. Let it bubble and thicken up, about 2 to 3 minutes.

    Nestle those patties back into the gravy, spoon some gravy over the top, reduce heat to low, cover, and let them simmer for 10 to 12 minutes until cooked through.

    Serve the steaks with plenty of that mushroom gravy spooned over the top, alongside mashed potatoes, rice, or egg noodles.

Pro Tips

  • Don't skip browning the patties first — that's where all the flavor in your gravy comes from.
  • If your gravy gets too thick, just add a splash more beef broth; too thin, let it simmer uncovered a few more minutes.
