Sunday Chicken Tacos
These chicken tacos are what I make when I want something quick but still feel like I cooked a real meal. You start with seasoned chicken that gets tender and tasty, then pile it into warm tortillas with all the fixings your family loves. It's the kind of food that brings everybody to the table smiling.

Ingredients
- 2 lbs chicken breast or thighs
- 2 tbsp olive oil
- 1 medium onion, sliced thin
- 3 cloves garlic, minced
- 2 tbsp chili powder
- 1 tbsp cumin
- 1 tsp paprika
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 cup chicken broth
- 1 lime, juiced
- 8 to 10 corn or flour tortillas
- Toppings: shredded lettuce, diced tomatoes, shredded cheese, sour cream, salsa

Heat up that oil in a big skillet over medium-high heat, then add your chicken pieces and let them brown on both sides, about 5 minutes per side — you're not cooking them all the way through yet, just getting some color on there.

Push the chicken to the side of the pan and throw in your sliced onions, let them soften up for about 3 minutes, then add your minced garlic and cook another minute.

Sprinkle your chili powder, cumin, paprika, salt, and pepper right over everything and stir it all around so the spices coat the chicken and onions real good, about 1 minute.

Pour in that chicken broth and lime juice, bring it up to a simmer, then turn the heat down to medium-low.

Cover it with a lid or some foil and let it cook for about 20 to 25 minutes until that chicken is tender and cooked all the way through.

Take the lid off and let it simmer for another 5 minutes or so — you want the sauce to reduce down and get a little thicker.

Shred up that chicken right in the pan with two forks, mixing it with all those onions and sauce.

Warm your tortillas in a dry skillet for about 30 seconds on each side, or wrap them in a damp towel and microwave them for 30 seconds.

Spoon the shredded chicken mixture onto each tortilla and set up your toppings so everybody can build their own just how they like it.

Serve it right away while everything's still hot, and let folks pile on the lettuce, tomatoes, cheese, sour cream, and salsa to their heart's content.
Pro Tips
- ★If you want to save yourself some time, throw everything in a slow cooker on low for 6 hours — it comes out just as good and you don't have to watch the stove.
- ★Don't skip browning that chicken first — those browned bits stuck to the pan are what make the sauce taste real good and deep, so scrape them up with your liquid.
